Teriyaki Tofu Stir-Fry: A Flavorful and Versatile Dish

Ingredients:

  • 1 block (14 ounces) firm tofu, drained and pressed
  • 1 tablespoon cornstarch
  • 1 tablespoon soy sauce

  • 1 tablespoon sesame oil
  • 1 tablespoon honey
  • 1 teaspoon ground ginger
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon black pepper
  • 1 tablespoon vegetable oil
  • 1/2 onion, chopped
  • 1 red bell pepper, chopped
  • 1 green bell pepper, chopped
  • 1 cup broccoli florets
  • 1 cup snap peas, trimmed
  • 1/2 cup water chestnuts, sliced
  • 1/4 cup green onions, chopped

Instructions:

  1. Preheat oven to 400 degrees F (200 degrees C).
  2. Cut tofu into 1-inch cubes. Toss tofu with cornstarch, soy sauce, rice vinegar, sesame oil, honey, ginger, garlic powder, and black pepper.
  3. Spread tofu on a baking sheet and bake for 20 minutes, or until golden brown.
  4. Heat vegetable oil in a large skillet or wok over medium-high heat. Add onion and cook until softened.
  5. Add bell peppers, broccoli, snap peas, and water chestnuts to the skillet. Cook until vegetables are tender-crisp, about 5 minutes.
  6. Add tofu to the skillet and cook until heated through.
  7. Stir in green onions and serve immediately.

Tips:

  • To press tofu, wrap it in a few layers of paper towels and place it on a plate. Weigh it down with another plate or a heavy object and let it sit for 30 minutes. This will help to remove excess water from the tofu, resulting in a crispier stir-fry.
  • If you don’t have cornstarch, you can use flour instead.
  • You can add other vegetables to this stir-fry, such as carrots, mushrooms, or zucchini.
  • If you want a spicier stir-fry, add a pinch of cayenne pepper or chili powder.
  • Serve teriyaki tofu stir-fry with rice, noodles, or your favorite side dish.
