Ingredients
- 1 pound Italian sausage, casings removed
- 1 tablespoon olive oil
- 1 onion, chopped
- 2 carrots, chopped
- 2 celery stalks, chopped
- 3 cloves garlic, minced
- 1 (28 ounce) can diced tomatoes
- 1 (15 ounce) can white beans, rinsed and drained
- 1 (14.5 ounce) can chicken broth
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 cup chopped fresh parsley
Instructions
- In a large pot or Dutch oven over medium heat, brown the Italian sausage in the olive oil. Remove the sausage from the pot and set aside.
- Add the onion, carrots, and celery to the pot and cook until softened, about 5 minutes. Add the garlic and cook for 1 minute more.
- Stir in the diced tomatoes, white beans, chicken broth, oregano, basil, salt, and black pepper. Bring to a boil, then reduce heat and simmer for 15 minutes.
- Add the browned Italian sausage back to the pot and simmer for 5 minutes more.
- Stir in the parsley and serve.
Tips
- For a thicker stew, mash some of the white beans before adding them to the pot.
